A great one for the summer BBQ. Make your vegetarian friends happy with these delicious and simple tofu burgers. They are packed with nutritious ingredients and provide healthy fats, proteins, fibre, antioxidants and plenty of vitamins and minerals.
- 140g tofu
- 5g fresh parsley
- 55g roasted/regular nuts & seeds
- 45g fresh, raw spinach
- 1 tbsp olive oil
- 1 egg
Makes 4 burgers
- Place all the ingredients in the blender together.
- Blend until thick paste consistency. Then using a burger press, or your hands, form the burger shapes. Lightly fry for 2 minutes on each side in a little coconut oil, or grill them for a lower calorie oiption.
- Serve on salad leaves
- Add cheese or egg as a topping if you wish (I enjoyed mine with Chimichurri sauce! Delicious)
