This bright, flavoursome salad sauce can also be used as a dip. The powerful, creamy taste of feta goes together so well with the earthy undertones of the beetroot. Not to mention the colour is divine!!
This is so easy to make as it only uses 3 ingredients.
- 100g feta cheese
- 1/2 raw beetroot, peeled
- Juice of half a lemon
Serves 2 people as a sauce, or gives enough dip for 4-5 people
- Place all of the ingredients together in a small food processor/mill adaptor of a hand blender and blend until you have a pink, creamy sauce.
- You might need to scrape down the sides once or twice, just make sure it is all blended.
- Serve on top of a salad or with crudites.
- Can be kept in hte fridge, covered, for around 3 days (according to the use-by date of the feta).
