Sometimes I just want to eat something cold and light. This easy to prepare, bursting with nutrition, sweet and savory salad is my all time favourite. All of the ingredients are in our weekly shop so I know I can throw it together in minutes, which sometime in our house is essential if you actually want to eat!

This recipe contains protein, carbohydrate, healthy fats, antioxidants, fiber, countless vitamins and minerals, and is one of those meals that you really feel good after you eat it. You know you have given your body an amazing meal that it will thank you for later!

  • Antioxidant rich
  • Raw, vegan


  • 2 sticks of celery
  • 3 good slices of mixed peppers
  • 6 cherry tomatoes
  • 1 large fig
  • 2 strawberries
  • 5 grapes, halved
  • 2 tbsp mixed nuts & seeds


Serves 1.

  1. Wash and chop all fruit and vegetables.
  2. Place all ingredients together in a large bowl, add the balsamic vinegar and mix well.
  3. Serve.
