Another of my “go-to” easy meals. This flavour combination works really well and the good thing is that you can be as creative as you like. The feta dips I have made in the past few months have varied a lot, but I am sharing this one as it is my favourite!

Ingredients

  • 1/2 red chilli (I removed the seeds)
  • 50g feta cheese
  • 5g fresh corriander
  • 1 tsp lemon infused olive oil

Method

Serves 1

  1. Simply place all of the ingredients together in a hand blender attachment  and blitz to form a creamy spread. You might have to scrape the mix down the sides a few times but it is very fast to make.
  2. When it is done spread it onto a cracker or some lovely crusty bread as I did.
