Another of my “go-to” easy meals. This flavour combination works really well and the good thing is that you can be as creative as you like. The feta dips I have made in the past few months have varied a lot, but I am sharing this one as it is my favourite!
- 1/2 red chilli (I removed the seeds)
- 50g feta cheese
- 5g fresh corriander
- 1 tsp lemon infused olive oil
- Simply place all of the ingredients together in a hand blender attachment and blitz to form a creamy spread. You might have to scrape the mix down the sides a few times but it is very fast to make.
- When it is done spread it onto a cracker or some lovely crusty bread as I did.
