I love living in Switzerland but for some reason they just can’t make hummus! Luckily for me it is so easy to make yourself. I have tried a few different combinations, but this has to be my favourite.

Chickpeas are the main ingredient in hummus and provide a fantastic fibre boost as well as a protein source. I added beetroot into the mix to really give an added antioxidant boost. I love beetroot, not only for the beautiful colour, but for the wonderful, earthy flavour it adds to meals. Beetroot is rich in folic acid (essential for preventing neural tube birth defects, so wonderful for pre-pregnancy diets), fibre, manganese and potassium. The green leaves found on raw beetroot are also packed with goodness and can be used as you would spinach – i’m all for reducing food waste!!

  • 70g chickpeas
  • ½ large garlic clove
  • 1 tbsp olive oil
  • 1 tsp tahini
  • 1 pinch beetroot


  1. Blend all ingredients together and serve with crudités, crusty bread or as part of a mixed salad.
