Soaking oats overnight is my number one time-saving tip. Our mornings are run by military-style timing, so we don’t have time to waste! Whenever I make this recipe I put it in the oven as soon as I wake up and then by the time the kids are awake & dressed it is finished. This recipe works very well with both dairy and non-dairy milks, so feel free to experiment a little. I usually do this with regular whole milk as my children also eat it. On occasion I have used my homemade almond milk (see separate recipe) or coconut milk.

This also tastes delicious the following day cold.

  • 250g oats
  • 200g blueberries
  • 30g desiccated coconut
  • 600ml milk (I used coconut milk but it can be made with regular dairy milk too)
  • 1 tsp vanilla extract


Serves 6

  1. Add the oats, berries, coconut, vanilla and milk to an ovenproof dish, mix well & leave overnight.
  2. In the morning bake at 200C for 25-30 mins until golden & crispy on top (add a drizzle of honey on top before baking if you like). If you want to speed up baking then you can bake for 20 minutes and then grill it to brown the top!
  3. This also tastes amazing cold from the fridge the next day!!
